A new sablé inspired by Parmigiano-Reggiano goes on sale at the Mr. CHEESECAKE GRANSTA TOKYO store, a permanent store inside JR Tokyo Station. "CHEESE SABLE Parmigiano" (チーズサブレ パルミジャーノ) is designed to deliver the rich umami of long-aged Parmigiano-Reggiano, as if eating the cheese itself, in a crisp-textured sablé.
It is sold for one month, from Sunday, November 1 to Monday, November 30, 2026, at the GRANSTA TOKYO store, and only 15 tins are available per day.
What Goes Into the Sablé
The dough is mixed with Parmigiano-Reggiano, and katsuobushi (dried bonito flakes) and colatura (コラトゥーラ), an Italian fish sauce, are added to balance the saltiness and umami against the sweetness. The smoky aroma of the katsuobushi enhances the flavor of the cheese, and the spicy kick of black pepper lingers afterward.
The sablés are packed in a white original tin printed with the Mr. CHEESECAKE logo.
