So that you can choose a cake to suit each of your holiday occasions, this year we have prepared a special cake in addition to the limited flavors of "Mr. CHEESECAKE."
Paris-Brest is a traditional French confection that originated from the long-distance bicycle race connecting the capital Paris and the port town of Brest in western France. Its ring-shaped design, inspired by a bicycle wheel, also resembles a wreath, so in recent years it has increasingly been made during the holiday season.
This time, I used pistachio, whose green color suits the holidays, to make a dessert that feels even more fitting for the season. To bring out the rich flavor of pistachio, I made it into a butter cream. I paired it with marinated apricot, which goes well with it, custard cream scented with tonka beans, and pecan nut praline, and sandwiched everything in ring-shaped choux pastry. It is designed so that a variety of flavors spreads in a single bite, and I hope you will enjoy the moment when all the parts blend together.

A flavor inspired by strawberry shortcake, with a gently sweet, pure white cheesecake and the pleasant tartness of strawberries. A rich cheesecake made with mascarpone is paired with a jelly made with strawberry pulp and puree. Finely crumbled genoise sponge is spread on the bottom of the cake, adding the savory flavor of shortcake sponge while keeping the texture smooth. The gentle, snow-like sweetness wraps around the tartness of the strawberries.

Mr. CHEESECAKE Pistachio Raspberry
A flavor pairing rich roasted pistachio with refreshingly tart raspberry. Combining ingredients such as matcha, vanilla and maple syrup brings out the full aroma and flavor of the roasted pistachio, giving the cake depth. Raspberry hidden at the bottom of the cake adds an accent of tartness that further highlights the richness of the pistachio. Alongside its vivid red and green colors, the richness of pistachio and the fresh flavor of raspberry come together.
