Restaurant Mori no Terrace, located inside the anime park Nijigen no Mori on Awaji Island, has introduced two spring limited-edition menus featuring fresh shirasu (baby whitebait) starting April 25, 2026.

The Awaji Fresh Shirasu TKG (tamago kake gohan — raw egg over rice) is priced at ¥1,900 (tax included), while the Triple Portion! Fresh Shirasu Bowl comes in at ¥4,800 (tax included). Both dishes are built around Awaji Island's locally harvested fresh shirasu in generous servings.

Awaji Island ranks as Japan's top shirasu-producing area, with the catch landed at Iwaya Port on the island's northern coast. By flash-freezing the shirasu immediately after harvest, a small portion of the catch can be offered raw — a qualification that only applies to about 2% of the total yield. The result is a crystal-clear, silky ingredient with a melt-in-the-mouth texture and a gentle sweet aroma that is available only during the spring season.
