Sushi Tomi — Craftsmanship Meets Awaji Island's Seasonal Catch

Sushi Tomi was created with a wish to introduce more people to the sushi of Awaji Island, and it sources carefully selected ingredients accordingly. Diners can enjoy the local catches from the waters around Awaji Island as they come into season, from conger eel caught off Numajima and red sea urchin from Yura to three-year-matured Awaji Island tiger fugu from Fukura.
The red vinegar used in the sushi rice is aged for a month with kelp, salt, and lemon, then finished with salt and sugar, giving it a notably mellow flavor. Each piece reflects the care and time put into ingredients found only on Awaji Island.
