PHILOCOFFEA, a specialty coffee company based in Funabashi, Chiba, has opened a new central kitchen at its headquarters roastery and is expanding its lineup of gluten-free-focused baked goods. Starting June 5, 2026, a range of individually wrapped pastries will be on sale at its stores alongside existing counter items.

The company has been offering food and baked goods alongside its specialty coffee at several stores. At its Pratz Narashino location, gluten-free and vegan-friendly menu options have been a key focus. The new central kitchen strengthens production capacity, enabling a consistent supply of around 10 varieties of individually wrapped pastries as well as counter-served items.

A Commitment to Delicious First

All of PHILOCOFFEA's baked goods are developed entirely in-house. The concept started from a simple idea: what if everything that pairs well with coffee could be made gluten-free? From there, the team refined recipes by minimizing white sugar, carefully balancing sweetness, and honing textures — with the aim of making pastries people would choose simply because they taste good, not just because they're gluten-free.

Rather than prescribing fixed pairings between specific coffees and pastries, PHILOCOFFEA encourages customers to explore combinations on their own. The flavors of coffee and sweets shift depending on roast level and brewing method, and the same pastry can give a different impression depending on the coffee it's paired with. The idea is to discover something new with each visit.

Rice Flour Coffee Financier – ¥295 (tax included)

A coffee financier made with the decaffeinated blend "025 Mexico." Coffee is extracted through melted butter to give it a soft, gentle aroma.

Rice Flour Financier – ¥275 (tax included)

A longtime favorite with the moist, chewy texture that rice flour is known for.

Banana and Oatmeal Scone – ¥360 (tax included)

A gluten-free, dairy-free scone made with the natural sweetness of oatmeal and banana. Crispy outside and soft inside, it pairs well with both black coffee and lattes. Caramel sauce can be added for ¥30 at the Pratz Narashino store.

Individually Wrapped Products

Starting June 5, 2026, individually wrapped pastries will be sold at the Omotesando, Pratz Narashino, and Chapo Funabashi stores. Product availability varies by location and may change based on production status.

Made with wasanbon sugar from Tokushima and domestic roasted soy flour (kinako). Delicately sweet with a nutty aroma and a subtle hint of salt. Egg- and nut-free.

Rice Flour and Wasanbon Sugar Snowball (Matcha)

Rice Flour and Wasanbon Sugar Snowball (Matcha) – ¥340 (tax included)

Uses wasanbon sugar from Tokushima and matcha from the "Okumidori" cultivar grown in Wazuka, Kyoto. This wagashi-inspired baked good brings out the direct umami of matcha and offers a new take on coffee pairing.

Light and crispy, with the characteristic airiness of rice flour. Coated in raw cane sugar from Kikai Island, Kagoshima, for a gentle depth of sweetness. Pairs well with any style of coffee.

A bar-style pastry with oatmeal, mixed nuts, cranberries, and coconut. The nutty, tangy sweetness develops with each bite, making it a great companion to coffee.
