A new restaurant, "Oniku to Jinen-jo Tororo-ya" (お肉と自然薯 とろろ屋), is set to open on April 19, 2026 (Sunday) on the 2nd floor of the ichiba-kan at Shimizu Fish Market "Kawashino-ichi," located in Shimizu Ward, Shizuoka City.
An Unlikely Choice: Beef at a Fish Market
Shimizu Fish Market "Kawashino-ichi" is known as the city's local kitchen, where wholesale operators sell directly to both tourists and local residents. In this fish-centric environment, the new restaurant takes a different approach by centering its menu on meat — offering a fresh alternative amid the surrounding seafood options.
For local regulars, the restaurant aims to deliver stamina-boosting, health-conscious meals suited for everyday visits. For tourists who may have been enjoying fish dish after fish dish, it provides welcome variety and a satisfying change of pace.
The concept draws on 35 years of expertise in Japanese cuisine and tororo (grated yam), combined with strong meat procurement capabilities through the parent group, to deliver a menu that balances health and satisfaction in a single meal.
The Menu: Nutrient-Rich Natural Yam Meets Carefully Selected Meat
The signature dishes combine tororo soup made from jinen-jo (natural mountain yam) — a rare ingredient prized for its intensely sticky texture and high nutritional value — with carefully selected cuts of meat.

The Natural Mountain Yam
The restaurant uses "Shirogane Jinen-jo," a variety of natural yam noted for its mild flavor, low bitterness, and clean finish. Its rich umami comes through without becoming heavy, making it a well-suited companion for meat dishes. The variety has earned a dedicated following for its superior quality.
Menu Features
Health meets hearty eating — The lightness of natural yam, combined with the richness of meat, delivers a filling meal that the restaurant describes as one that "actually leaves you feeling good."
Appeals to a wide range of diners — The menu is designed for health-conscious guests, working-age diners, and tourists alike.
Value-conscious pricing — Group bulk purchasing keeps quality and price in balance. A special weekday price campaign is planned during the grand opening period.

A New Shizuoka Specialty: Eel Meets Natural Yam
Alongside the meat dishes, the menu features side items that highlight Shizuoka's local ingredients, including a hitsumabu-style set meal using Hamanako unagi (Lake Hamana eel) paired with natural yam.

[New Specialty] Hamanako Unagi and Jinen-jo Hitsumabu Set Meal
This set meal offers four ways to enjoy the dish:
- Unagi gohan — Enjoy the eel's natural umami on its own, served over rice.
- Unagi chazuke — Add wasabi and green onion, then pour kombu tea over for a lighter, refreshing take.
- Unagi tororo don — Pour jinen-jo tororo over the eel for a rich, mellow finish.
- Jinen-jo tororo meshi — Close with a simple bowl of barley rice topped with natural yam tororo.
