Tabiwaga, the wagashi specialty select online store operated by GA Crossing Inc. (headquartered in Kobe, Hyogo; President: Ryota Momoki), is launching a new collaboration series with long-established wagashi shops. Officially known as Tabi Suru Yō ni Wagashi to Deau, the store's first installment in the series teams up with Kashō Fūgetsu, a long-established confectionery shop in Hitachi, Ibaraki, for a new treat, とろり、ほどける生チョコ羊羹, arriving in a limited run of just 100 sets on the Tabiwaga official site.

Redefining the Classic Yokan With a New Kind of Indulgence

The chocolate yokan combines aromatic Belgian couverture chocolate with clean-tasting domestic white bean paste. This specially blended chocolate bean paste is layered with agar and kudzu starch to create a soft, melting texture, while a final touch of salt gently brings out the chocolate's depth. Each bite melts away into a moment of adult indulgence — a new kind of reward that goes beyond the usual yokan.

The Star Ingredient: A Chocolate Bean Paste Blending Chocolate and White Bean Paste

The base is a 56% cacao couverture chocolate, chosen for its well-balanced bitterness and sweetness along with its rich body and aroma, combined with white bean paste known for its refined sweetness. The tebo beans used are a variety of white kidney bean with a white seed coat, prized for their clean, mellow flavor without any off-notes.

A Generous 70% Chocolate Ratio to Bean Paste

Careful attention went into the ratio of these two ingredients as well. The result is a smooth, melting texture unlike any yokan before it — a Japanese dessert with a completely new feel, built from careful attention to detail.
