Paris-based chocolate specialist Alain Ducasse Chocolat Paris is rolling out an autumn-winter lineup at Le Salon, the dessert salon attached to its Nihonbashi Tokyo Atelier, starting Monday, September 14, 2026. The lineup is headlined by the seasonal afternoon tea Le Goûter, which lets guests savor the rich aroma of cacao alongside autumn's bounty with all five senses, plus a series of carefully crafted seasonal plated desserts (assiette desserts).
The popular all-chocolate afternoon tea Le Goûter brings together a colorful, refined lineup of chocolate sweets that draw out the full character of cacao carefully selected from around the world. Guests can enjoy a gradient of delicate textures and deep flavors shaped by skilled craftsmanship.
Also joining the lineup are desserts that delight the eye as much as the palate, including Cabosse Chocolat, an artistic creation with a striking geometric form, and Sablé Marron Myrtille, which pairs delicate Japanese ingredients like matcha with the rich chestnut flavor now in season.
Wrapped in the aroma of cacao drifting through the atelier, the collection offers a chocolate-filled moment steeped in Alain Ducasse's distinctive world of flavor.

Cabosse Chocolat

An artistic, geometric form inspired by the cabosse — the cacao pod from which chocolate is made. Inside, a smooth caramel and a moist, slightly bitter chocolate biscuit are enclosed within a cream made from 75% Madagascar chocolate and a mousse of 75% original-blend dark chocolate. The surface is finished with a velvet spray of 75% original-blend chocolate and set atop a chocolate crumble.
Rich and smooth with a delicate aroma, it draws out the full strength and depth of cacao in a creation available only this fall.

Sablé Marron Myrtille

A round, crisp matcha pâte sablée (Pure Beurre Matcha) is topped with a thin disc of 75% original-blend dark chocolate and a glossy chestnut mousse, finished Mont Blanc–style.
Inside the chestnut mousse lies a soft, moist biscuit made with 75% original-blend dark chocolate, along with a tangy blueberry compote — a pairing of chestnut and blueberry that strikes an exquisite balance. The glossy marbled finish, unique on every piece, is hand-finished by the atelier's pâtissiers. It's best enjoyed alongside Madagascar chocolate ice cream.

Fondant Caramel Coco

A fondant batter made with 75% original-blend dark chocolate is mixed with roasted coconut and slow-baked at a low temperature for a smooth, melting texture. Layers of roasted coconut aroma and texture, a deeply toasted caramel mousse, and rich chocolate flavor come together in this seasonal creation. It's finished with a coating of 75% dark chocolate.
Sliced and gently warmed, it brings out the cacao aroma even further for a smooth, melting bite.
