CHOCOLATIER PALET D'OR, the Bean to Bar chocolate specialty shop, is introducing two new autumn treats from September 4 (Friday), 2026: a second Autumn Customize Parfait and a chocolate box called Coffret Mariage that combines ingredients for a synergy of flavor.
Autumn Customize Parfait
This past summer's first Customize Parfait drew an enthusiastic response, with guests saying they enjoyed picking their own components and comparing which combinations they liked best. Building on that reaction, an autumn-themed version now arrives as the second installment of the Customize Parfait.
The base of cacao-scented vanilla ice cream and house-made chocolate ice cream stays the same for every guest, while five separate choices let diners pick one option from two at each spot. The seasonal ingredients on offer include chestnut, sweet potato, grape, and pear.
Guests can choose a refreshing pear sorbet to lighten a parfait that might otherwise feel a little heavy for the season, or a mellow, richly sweet maple ice cream instead — letting mood and personal taste shape a completely different parfait each time. The parfait glass has also been redesigned so every last spoonful can be enjoyed, and the grapes chosen for garnish change the dessert's look entirely. Guests can build their own autumn parfait to match their own taste.

Coffret Mariage
Coffret Mariage is a set of chocolates designed around the image of vividly colored leaves carried on the changing-season breeze.
Made with house chocolate crafted in house from the cacao bean, each piece layers ganache and praline for a marriage of flavors. The praline is made in house by adjusting the roast of almonds and hazelnuts, caramelizing them, and then grinding them to bring out their texture and aroma to the fullest. The chestnut and rum chocolate blends a paste made from Japanese chestnuts grown in Kumamoto Prefecture with a paste made from Italian chestnuts, combined with house-made chocolate for a deep, rounded flavor. The aromas of whiskey, wine, and rum unfold slowly alongside the chocolate's melt, pairing with each ingredient for a seasonal chocolate box where every piece has its own character.

Founded in 2004 by chef Shunsuke Saegusa, CHOCOLATIER PALET D'OR is a Japanese chocolatier built around exploring the true character of cacao in depth. It was an early adopter of the "Bean to Bar" approach, handling everything from selecting and roasting cacao beans to making the finished chocolate in house, producing its own bitter, milk, and white chocolate and building a distinctive "chocolate library" that draws out layered aroma and lingering flavor. The brand now operates five stores across Tokyo, Osaka, and Yamanashi, offering a chocolate experience meant to be enjoyed with all five senses.
