The CHOYA Ginza BAR, a specialist umeshu cocktail bar in Ginza, Tokyo, will serve two new "Seasonal Sweets Umeshu Cream Sodas" for a limited time from Thursday, November 5, 2026 to Tuesday, January 12, 2027. The two drinks, "Rich Buttery Tarte Tatin" (芳醇バター香るタルトタタン) and "Burnt Caramel Mont Blanc" (焦がしキャラメルモンブラン), were developed with sweets starring apples and chestnuts, both in season in autumn, in mind.
Rich Buttery Tarte Tatin
The "Rich Buttery Tarte Tatin" starts with an original fully ripened ume syrup, made from fully ripened Nanko plums that are pitted one by one so that the fruity-scented flesh can be used. The syrup is combined with authentic umeshu, apple jam, and apple juice, then topped with soda. It is layered with a fully ripened ume and apple yogurt espuma and honey-candied apple, then sprinkled with cinnamon powder.
It is finished with apple caramelized in ume honey butter, vanilla ice cream, and an ume monaka wafer. The sweet cocktail balances the rich sweetness and deep flavor of baked apple and butter with the mild tartness of fully ripened ume.
Burnt Caramel Mont Blanc
The "Burnt Caramel Mont Blanc" blends fully ripened umeshu syrup, marron cream, and yogurt, which is finished with soda for a refreshing taste. Layers of ume caramel and marron cream espuma are added, and one chestnut compote sits on top. Apple slices and vanilla ice cream go on next, and the drink is wrapped in thread-like piped marron paste and served with an ume monaka wafer. It is a rich sweet cocktail that pairs the mellow sweetness of chestnut with the refreshing tartness of fully ripened ume and yogurt.

Both new cocktails can be ordered in an alcoholic version or a non-alcoholic version. They are also available as the dessert choice in the "Ume-Zukushi Afternoon Tea & High Tea" course. The course features ume-inspired dishes, hors d'oeuvres and sweets chosen to pair with umeshu, and over 100 types of drinks, including tasting flights of 3 to 5 types of umeshu, popular umeshu cocktails, and non-alcoholic umeshu cocktails, all-you-can-drink for 2 hours and 30 minutes (last order 30 minutes before the end). Hot drinks such as coffee and tea are also included. The relaxed, adult-casual space suits a late lunch with friends or family, a leisurely cafe break, or a rest during a shopping trip.
