Bono Bakery, a bakery shop in Osaka's Horie area, is launching a new addition to its lineup: the "Lemon Brûlée Raw Bagel," going on sale Saturday, May 16, 2026.
Following the "Honey Brûlée Raw Bagel" that proved popular when it launched in April 2025, the shop is now introducing a summer-inspired seasonal flavor. The new "Lemon Brûlée Raw Bagel" takes the signature toasty richness of brûlée and pairs it with a homemade cream carrying a gentle lemon aroma.

This raw bagel features a caramelized brûlée surface filled with a homemade cream lightly scented with lemon. The crispy richness of the brûlée is layered with the depth of cream cheese and a refreshing hint of lemon, creating a flavor you can enjoy right to the last bite. The exterior is crispy while the inside delivers a springy, chewy texture—one of the series' defining qualities.

For every five Raw Bagels purchased, the shop prepares them in an original box. The simple, photogenic design works perfectly for picnic outings and is also popular as a casual gift or snack to share.
The "Raw Bagel Series" — Over 290,000 Sold
The Raw Bagel Series has sold over 290,000 units since its release in fall 2023. The series stands out for its soft, springy "mugyu-mochi" texture—far from the typical image of a bagel. To achieve this, the fermentation process and ingredient balance have been optimized to produce a high-moisture dough.
A popular spin-off within the series is the "Raw Bagel Donut," which retains the raw bagel's signature texture while being made without deep-frying.
