About the New Flavor
The new chips recreate the rich taste of scallops grilled over charcoal and seasoned with butter soy sauce, delivering a deep, savory umami in every bite. The flavor balance was fine-tuned through repeated adjustments to fully bring out the scallop's natural richness. Thick-cut potato chips are coated with a concentrated flavor drop, achieving a crisp exterior and a light, airy texture inside. The delicate seasoning was supervised by Hiroo Onogi, a renowned Japanese cuisine restaurant in the Hiroo neighborhood of Tokyo.

Positioned as an evolution of the standard potato chip, the shop's concept is "reaching for the heights, grasping the umami." Following its first renovation in April 2025, the shop has been drawing daily lines of eager customers.
