From the very beginning of cassata sandwich creation, there was a goal I wanted to achieve: creating a cassata sandwich that would be completely satisfying with an intensely rich flavor without using any fruit. Creating a pleasant aftertaste that combines richness with lightness, without relying on the refreshing acidity and juicy texture of fruit, was a challenging endeavor. The ingredient chosen for this was caramel - with its addictive bitter notes and smooth, melting texture.
By blending "milk caramel" that leaves a rich and milky aftertaste with "bitter caramel" that highlights the fragrant bitterness of intensely roasted sugar in a unique ratio, the aromatic fragrance and richness of caramel were maximized.
Additionally, roasted pistachios and walnuts were mixed in, layering different flavors of bitter notes to ensure the caramel taste comes through directly while leaving a deep, lingering finish.
