Italian restaurant Cassolo (Toranomon, Tokyo) is serving a limited-edition dessert, the "Snow Berry Fresh Tiramisu" (スノーベリーの生ティラミス), from April 1 to May 31, 2026. The dessert was developed by Chef Makoto Sato as part of the TORANOMON JUST RIGHT NEW FOOD project, which brings together local restaurants and startups to explore sustainable food ingredients.

The dessert pairs a smooth, rich cream with the sweet-tart flavor of strawberries. It incorporates XEM GROUP's Snow Berry — shaved thin while still frozen — delivering both a visually striking presentation and a taste that evokes the arrival of spring. Priced at ¥900 (tax included).
About XEM GROUP's Snow Berry

Snow Berry is a new-texture frozen strawberry developed by XEM GROUP, made without preservatives. Because the freezing process produces no ice crystals, the berry can be processed — including shaving — while still frozen. This preserves the aroma and texture in a way that challenges conventional expectations of frozen fruit, allowing peak-season freshness to be enjoyed year-round.
The proprietary Water Stability System (WSS) technology behind Snow Berry works by uniformly controlling the temperature of food, extending freshness at sub-zero temperatures and maintaining high quality even after the freezing process.
About TORANOMON JUST RIGHT NEW FOOD
The TORANOMON JUST RIGHT NEW FOOD project is a community-wide food initiative in the Toranomon and Nishi-Shimbashi area. It connects local restaurants with startups to create original menus featuring new ingredients and technologies, with the goal of promoting food sustainability in the neighborhood.
Chef Makoto Sato

Chef Sato started his culinary career at "Da Orto" in Nakameguro, an Italian restaurant centered on organic vegetables. He later worked at "Canoviano Tokyo," a natural Italian restaurant that uses no garlic or fresh cream, and at "Aroma Classico," a sister restaurant of the Michelin two-star "Aroma Fresca." In 2022, he took on the role of opening head chef at Cassolo.
About Cassolo
Cassolo is an Italian restaurant in Toranomon that supports chefs in launching their own ventures and developing their careers. It opened in November 2022 as the first directly operated startup restaurant by Chef's Value. The name is derived from the Italian word for "runway" — a place where chefs take off toward new possibilities, and a home base to return to.
