The Star of Choioden Is Its "Ultimate Hamo Dashi"
The biggest feature of Choioden is its original hamo (はも) dashi, which the brand has stuck with since its founding.
The dashi draws on the refined umami that is characteristic of hamo, and the umami released by each oden ingredient builds on it, so the flavor deepens the more you eat. The result is "oden whose dashi is delicious too," with a broth that guests will want to drink down to the last drop.
Beyond classics such as daikon, the menu at Choioden includes meat-based oden and dishes using seasonal ingredients, items that are not bound by the conventional image of oden.
"It doesn't look like oden, but once you taste it, you'll understand."
The shop brings this new way of enjoying oden to Sapporo's Sumikawa as well.

Table-Top Condiments for Oden Your Way
At Choioden, the enjoyment lies not only in the oden itself but also in how it is combined with condiments.
On the tables are condiments that pair well with oden: harissa, nure ichimi (濡れ一味), yuzu kosho and karashi (mustard).
Along with the classic karashi, guests can pair daikon with harissa or add a refreshing heat with yuzu kosho, so the same oden tastes different depending on the condiment. Thinking "which combination today?" and finding a favorite way to eat is part of the fun at Choioden.

Drinks to Enjoy With Oden
The drink menu is chosen to go with the food. It includes bottled sours made with seasonal fruit, the visually vibrant "flower sours" (お花のサワー), and the "ultimate green tea highball" (究極の緑茶ハイ), which goes down refreshingly alongside oden. The shop suits many occasions, from a quick drink after work to a full meal.

About Choioden
Choioden is a casual oden tavern that was born in Kodenmacho, Tokyo on May 27, 2019.
Under the concept "If you are particular about dashi and seasonal ingredients, oden is delicious 365 days a year," it serves oden that combines its original hamo dashi with seasonal ingredients.
The menu goes beyond classic oden, widening the scope of "oden" with meat-based oden and creative oden made with seasonal ingredients. Guests can enjoy "oden whose dashi is delicious to drink," created by the umami of each ingredient blending with the hamo dashi, together with carefully chosen condiments and drinks.
