August still brings intense lingering summer heat, but on the calendar it marks Risshu, the traditional start of autumn, as the season gradually turns. Taikanen has prepared carefully selected ingredients that offer an early taste of the "bountiful autumn" — including a nourishing soup to gently soothe a body tired from the heat, along with autumn salmon, mushrooms, and chestnuts. The result is a refreshing lunchtime experience that lets guests savor the arrival of autumn a little early, in a cool and comfortable setting.
Figs and Autumn Salmon Bring Color to an Early Taste of the "Bountiful Autumn"

The course opens with the "Assorted Festive Appetizers," using ingredients such as figs, which are in season from summer into autumn, and sweet potato with its gentle sweetness. Visually vibrant, the dish lets guests experience the early arrival of autumn and the changing of the seasons from the very first course. The "Nourishing Soup of Seasonal Mushrooms and Shark Fin" is gentle on a body still adjusting to the lingering summer heat, while the "Lightly Stir-Fried Shrimp with Colorful Autumn Vegetables" draws out the natural flavor of its ingredients — rich in umami yet light, making it easy to keep eating.

While preserving classic dishes such as "braised whole shark fin" and "Peking duck" that have been loved for over half a century, he has learned authentic techniques from chefs from various regions of China, including Hong Kong, Beijing, and Sichuan, continuously refining his skills. He has received the "Technical Merit Award" and "Achievement Award" from the Japan Chinese Cuisine Association.
