Ginza Wako Annex is rolling out a summer sweets lineup this season, headlined by the fifth installment in its acclaimed Premier series: "Premier Mango 'Floraison de l'Été — 夏の開花 —'." Alongside the new cake, the annex is launching a frozen parfait set that brings the tea salon's popular desserts home, as well as several seasonal and limited-quantity items suited for summer gifting.

Premier Mango

The fifth entry in Wako's Premier series of premium fresh cakes is a summer exclusive built around hand-selected apple mangoes from Kochi Prefecture. Each mango is sliced paper-thin and layered meticulously to create a bloom-like finish that showcases the fruit at its peak. Inside, layers of coconut cream, fresh cream, mango and passion fruit jelly, and custard cream add contrasting richness and acidity that complement the mango's natural sweetness. The result is a refined, juicy cake that draws out every facet of the fruit's appeal.

Inspired by the parfaits served at the Wako Annex Tea Salon, this frozen set lets customers enjoy the same desserts at home. Each parfait is carefully constructed so that texture, smoothness, and fruit freshness are at their best after thawing. The set of three includes:

Parfait lineup

Mango Parfait — A tropical combination of mango and coconut layered with passion fruit, white chocolate, and a lime jelly that adds a clean, refreshing finish.

Chocolate Parfait — Chocolate ice cream, sauce, and brownie are stacked for depth of flavor, with mascarpone ice cream lending a mellow richness that lightens the aftertaste.

Berry Parfait — Cassis and framboise provide the bright, tart backbone, balanced by the gentle sweetness of vanilla and cream. Feuilletine coated in ruby chocolate adds a satisfying crunch.

The parfaits are delivered frozen; thaw in the refrigerator for approximately 1 hour 30 minutes before serving. The set of three is available for delivery; individual parfaits can be purchased in-store.

A summer exclusive featuring 清水白桃 (Shimizu Hakutou), regarded as one of Okayama Prefecture's finest white peach varieties. The tender, sweetly fragrant compote is enclosed in a jelly made from pureed peach flesh — the equivalent of a whole fruit packed into each piece. Fresh and generously flavored, it delivers something close to eating the peach itself.
