Hayama Hikage Chaya, a restaurant operated by 株式会社日影茶屋 in Hayama, Kanagawa, will host a special five-day event called "An Evening of Ayu in the Garden" from Thursday, July 16 to Monday, July 20, 2026. Guests can enjoy a special kaiseki dinner centered on carefully selected young ayu (sweetfish), served in the restaurant's tranquil garden setting.
Charcoal-Grilled Ayu — Cooked Over an Open Fire
Each young ayu is skewered individually and grilled slowly over charcoal in the inner garden. The fish are young enough that even the bones are soft, allowing guests to enjoy them whole from head to tail. The aroma of the charcoal fire and the sight of the fish being grilled create a distinctly summery atmosphere.
Evening Garden Terrace Dining
The event offers a special kaiseki course featuring ayu in a variety of preparations.
