Prestige champagne house Dom Pérignon is bringing its 2026 "Harmony" theme to Tokyo with a one-day-only pairing dinner at Sushi Saito in Roppongi on October 10, 2026. The event pairs chef Takashi Saito's sushi with five vintages of Dom Pérignon, including four wines being unveiled for the first time this year.
The dinner is part of "DOM PÉRIGNON DINNERS – HARMONY EDITION," a global gastronomy project in which chefs from the Dom Pérignon Society, a worldwide community of chefs and sommeliers, each interpret the year's theme of harmony through their own cuisine. Sushi Saito is the sole Japanese participant, with chef Takashi Saito — one of the Society's Japanese members — expressing the concept through sushi, a cornerstone of Japanese food culture.
Chef Takashi Saito's Take on Harmony
Saito's approach centers on sushi that is simple and clearly defined in flavor, drawing out the character of each ingredient and putting full attention into every piece in the moment it is formed, within a room that feels composed yet relaxed. For this collaboration, he describes harmony as sushi and Dom Pérignon each keeping their own character while drawing out the best in the other — creating a flavor that neither could produce alone.

Five Vintages, Five Expressions of Harmony
For the first time in its history, Dom Pérignon is releasing four vintages over the course of 2026. The pairing course brings together all four of these rare releases, plus the Dom Pérignon Vintage 2013 Magnum, each reflecting a different vintage character and its own take on harmony.
- Dom Pérignon Vintage 2017 — Born from a difficult harvest year through strict selection and blending, this is one of the smallest-yield vintages in Dom Pérignon's history, balancing tension and richness, precision and power.
- Dom Pérignon Rosé Vintage 2010 — Released after roughly 15 years, this rosé captures the strength and vitality of Pinot Noir, with concentrated fruit, refined acidity, and a silky texture balancing tension and elegance.
- Dom Pérignon Vintage 2008 Plénitude 2 (P2) — An exceptional 2008 vintage that has reached its second plénitude after around 15 years of cellar aging, showing refined structure and depth, bright acidity, and a creamy texture shaped by time.
- Dom Pérignon Vintage 2018 — Born in a year of favorable natural conditions, this vintage embodies harmony brought about by nature itself and marks a new milestone in the work of chef de cave Vincent Chaperon.
- Dom Pérignon Vintage 2013 Magnum — A full-bodied vintage balancing rich depth with the acidity typical of late-harvested grapes, expressing a clear, "transparent elegance" shaped by time.

Each session runs two hours, for 21 seats in total.

Price: ¥110,000 per person (tax included)
Course content: Five appetizers, 12 pieces of nigiri, tamago, makimono, and soup. The menu is subject to change depending on ingredient availability.
Vintages served: Dom Pérignon Vintage 2017, Dom Pérignon Vintage 2018, Dom Pérignon Rosé Vintage 2010, Dom Pérignon Vintage 2008 Plénitude 2, and Dom Pérignon Vintage 2013 Magnum, with one glass (100ml) of each per guest. An ambassador will attend every session to introduce each vintage.

About Chef Takashi Saito
After training at a well-known Ginza sushi restaurant following high school, Takashi Saito joined Sushi Kanesaka in 2000. He took charge of Sushi Kanesaka's Akasaka branch in 2004 and renamed it Sushi Saito upon going independent in 2007. The restaurant earned a Michelin star soon after, followed by three stars in 2009, a rating it held for a decade before relinquishing it in 2019. Since opening a location at the Four Seasons Hotel Hong Kong in 2018, Saito has expanded to seven restaurants under the Sushi Saito name and other projects he has produced, while also mentoring the next generation of chefs.
About the Dom Pérignon Society
The Dom Pérignon Society is a global community of more than 137 gastronomy chefs and sommeliers, centered on chef de cave Vincent Chaperon. Formed in Italy in the mid-2000s, it operates on a shared principle of exchanging knowledge, elevating one another, and sharing memorable experiences. Members express the many facets of each Dom Pérignon vintage through their own creative work while contributing to the future of gastronomy through collaborative projects. Takashi Saito is one of its Japanese members.
Other Japanese members of the Society include chef Yoshihiro Narisawa of the two-Michelin-starred NARISAWA, chef Yoshihiro Murata of the three-Michelin-starred Kikunoi, chef Yusuke Takada of the two-Michelin-starred La Cime, and chef Natsuko Shoji of été in Yoyogi-Uehara (Michelin star ratings as of 2025). This year, sommelier Kazutaka Ozawa and chef Michihiro Haruta of the two-Michelin-starred Crony in Nishi-Azabu, along with chef Daisuke Takubo of TACUBO in Daikanyama and Shirokanedai, have joined as new members.
