A limited-time parfait celebrating the flavors of Kyoto is coming to Hotel Granvia Kyoto. The 2F cafe restaurant Le Temps will serve the "Kyoto Sake Lees Melon Parfait" from May 7 through June 30, 2026.
About the Kyoto Sake Lees Melon Parfait
The parfait brings together Earl's melon — prized for its rich fragrance and sweetness — with Kyoto-sourced ingredients: sake lees from Sasaki Brewery, Kyoto-produced milk, and yogurt from Miyama, Kyoto. Approximately one-third of a large Earl's melon is used per serving. The melon flesh is sliced into wedges and arranged carefully along the inside of the glass so the vivid green color remains visible from every angle. The top is finished with a piece of melon bearing a beautiful netted pattern and a delicate spun sugar creation by the pastry chef.

The sake lees come from Sasaki Brewery, produced using the "Kyono Koto" yeast developed by the Kyoto Municipal Institute of Industrial Technology and Research. The lees carry a fragrant ginjo aroma with a clean yet rich depth that pairs naturally with cream and crumble, harmonizing well with the melon's sweet and aromatic character.
The parfait layers start at the base of the glass with a refreshing jelly made from dry white wine and lemon juice, followed by a smooth mousse using Miyama, Kyoto yogurt. A crispy crumble made with Sasaki Brewery sake lees and Kyoto-produced milk is layered on top, creating a contrast of textures that reflects the pastry chef's attention to detail.
At the center, a rich sake lees cream — made from carefully strained sake lees combined with Kyoto milk — is piped in with a subtle rice aroma. A dense milk ice cream sits on top; it works beautifully alongside the melon and sake lees cream, and as it melts, it transforms into a sauce that ties all the elements together.
