Hotel Metropolitan Saitama Shintoshin will feature kuwai (arrowhead), a local ingredient cultivated by JR East Minami-Koshigaya Station staff, as part of their New Year's breakfast offerings. The simmered kuwai dish will be available at Cafe Cross Yard from January 1 to January 3, 2026.

About the Simmered Kuwai Dish

The kuwai is boiled in water for 15 minutes, then seasoned with dashi broth, soy sauce, sugar, mirin, and salt. It is then refrigerated for approximately three days to allow the flavors to fully develop.

The dish offers a satisfying texture with a refined, slightly bitter aftertaste characteristic of kuwai. This year's harvest has been particularly abundant, yielding many excellent quality arrowheads.

However, only four farms in Koshigaya City currently produce kuwai. This is a rare opportunity to enjoy this precious local ingredient from Koshigaya, Saitama Prefecture.
