Starting September 1, Hotel New Otani's three directly managed hotels in Tokyo, Makuhari, and Osaka are holding a limited-time Chestnut and Grape Sweets Fair, serving sweets made with autumn's chestnuts and grapes across their in-house restaurants and cake boutiques.

The fair's centerpiece is the Super Mont Blanc, built from Japanese chestnuts the pastry chef selects at their peak. This year's cake starts with Ginyose chestnuts from Hyogo Prefecture, prized as one of the finest Japanese chestnut varieties. To let their refined sweetness, fluffy texture, and rich aroma come through, the amount of fresh cream is kept to a minimum, concentrating the chestnut's own deep flavor.

The inside carries its own touches to bring out the chestnut's character: an almond tart layered with Italian marron glacé, wasanbon vanilla mochi, baked elderflower meringue coated in white chocolate, and a vanilla and cream cheese ganache montée, finished with a touch of Aogashima's "Hingya no Shio" salt as an accent. It's a limited-time piece built from layers of distinct ingredients for a deep, complex flavor.
