The selection includes a Tuna Tsukeyaki-don — tuna slowly marinated in a special soy sauce to bring out the full flavor of the red fish — along with a Salmon Ikura-don featuring rich, fatty salmon paired with plump salmon roe. The Sea Bream Goma Dare-don offers firm, delicate white fish draped in a fragrant, creamy sesame sauce.

Seasonal early-summer options include an Aji (Horse Mackerel) Don and a Sakura Ebi Kakiage-don (cherry shrimp tempura fritter). For meat lovers, there is the Beef Tororo-don with grated yam. The full ten-bowl lineup draws from both sea and land ingredients.

Whether the preference is a light seafood combination or a more filling meat-and-fried pairing, the two-bowl selection can be tailored to the mood of the day.

The "Okonomi Don Gozen (Kiwami)" pairs the chosen donburi with a set of classic, skillfully prepared sides: Gindara Saikyo-yaki (silver cod marinated in Kyoto-style miso, grilled until golden and fragrant), freshly fried Tempura with a light crispy batter, and a smooth Tamajimushi (savory egg custard) infused with dashi. Together, they form a refined meal suited to the fresh early-summer season.

For a lighter option, the standard "Okonomi Don Gozen" is available alongside the premium version. It features the same choice of two mini donburi, accompanied by mini soba noodles, a small side dish, pickles, red miso soup, and a sherbet dessert.
Crafted by Head Chef Kenichi Hiruma

The set meal is overseen by Kenichi Hiruma, Head Chef of Japanese Cuisine at Hotel New Otani Makuhari. Born in Tokyo in 1974, Hiruma graduated from Musashino Culinary School and joined New Otani Co., Ltd. in 1993. He has trained overseas in Los Angeles and Beijing, and received the Minister of Health, Labour and Welfare Award at the National Japanese Cuisine Skills Improvement Competition (Open Category).
