Hotel New Otani Makuhari's Japanese restaurant Senbazuru is offering "Chilled Kabosu Udon" as a seasonal menu item from June 15 (Monday) to August 31 (Monday), 2026. The dish was developed to bring a cool, refreshing dining experience during what forecasters expect to be an especially intense summer.

Weather reports indicate that this summer will see above-average temperatures across Japan. The country has also introduced the designation "scorching heat day" (酷暑日) for days reaching 40°C, reflecting the growing severity of summer heat year after year. Against that backdrop, Senbazuru has put together this chilled noodle dish with the hope of helping guests refresh both mind and body during the stifling heat of summer.

The "Chilled Kabosu Udon" is built on a clear, refined dashi stock prepared with natural water and high-quality tuna flakes (まぐろ節). Kabosu — a citrus fruit rich in Vitamin C — lends a bright acidity and vivid aroma to the broth. Paired with smooth, silky chilled Inaniwa udon noodles, each sip delivers a crisp, cooling sensation. The combination of the delicate dashi and the lively fragrance of kabosu makes the dish a fitting choice when appetite suffers in the heat.

The Chef Behind the Creation

Chef Kenichi Hiruma

The dish comes from the hand of Kenichi Hiruma, Head Chef of Japanese Cuisine at Hotel New Otani Makuhari. Born in Tokyo in 1974, Hiruma graduated from Musashino Culinary School and joined New Otani in 1993. He has built his craft both in Japan and abroad — with experience in Los Angeles and Beijing — and has been recognized with the Minister of Health, Labour and Welfare Award at the National Japanese Cuisine Skills Competition.
