Hands-On Sake Brewing in Off-Limits Koji and Shubo Rooms at the 39th Ichinokura Sake University in Miyagi, April 2027

Ichinokura Co., Ltd., a sake brewery in Matsuyama, Osaki City, Miyagi Prefecture, will hold the 39th "Ichinokura Sake University" (Ichinokura Nihonshu Daigaku), a one-night, two-day introductory course, on April 10 and 11, 2027. Participants learn about the appeal of sake by experiencing it firsthand.

The highlight is the sake brewing experience. Participants enter the actual brewing areas that are normally closed to the general public, including the koji room (kōjimuro), the shubo room (shuboshitsu), and the moromi room, and take part in handmade brewing work alongside the brewery's craftsmen (kurabito).

What the Course Includes

Beyond the brewing experience, the program offers a sake brewing lecture that explains the history, methods, and characteristics of sake in an easy-to-understand way, and a tasting practice session where participants learn by distinguishing a wide variety of sake. There is also a get-together where participants can talk directly with the brewery owner (kuramoto) and the master brewer (toji). The course suits sake fans as well as those who want to learn more about sake.

Main program:

  • Sake brewing lecture (explanation of history, methods, and characteristics)
  • Sake brewing experience (hands-on work in the koji room, shubo room, moromi room, and more)
  • Conversation with the brewery owner and master brewer
