A gluten-free rice flour bagel specialty shop called "Kometora" will open in Fukuoka's Tenjin district on February 1, 2026. Kometora started from concerns about the decline of rice farming due to decreasing rice demand. Consumption is shrinking and labor is insufficient. Even efforts to make "delicious rice" are sometimes judged solely on "price."

In this situation, rather than "making to sell," they wanted to protect the value of rice fields by "transforming it into a form that reaches someone's daily life."

By turning rice not just into something to eat as is, but into bagels that can be easily picked up as a daily staple, a children's snack, they want to expand the possibilities of rice.
