Kushiro Prince Hotel (7-1 Saiwaicho, Kushiro, Hokkaido) will hold a one-night-only event on Saturday, November 14, 2026, centered on "Craft Beef," a new brand of beef born in Tsurui Village. Under the theme of "all things Tsurui," the menu brings together the village's dairy products, vegetables, and other local ingredients.
The hotel is working with the Tsurui Village Office to share the appeal of eastern Hokkaido's rich nature and food culture, and this event is part of that effort. Beyond the flavors of the ingredients, the event also highlights the producers' challenges, the recycling of local resources behind the dishes, and the new possibilities these resources hold.
Students from Kushiro Public University have been involved since the menu development stage. Their perspectives and ideas are woven into the menu, and the project is also meant to create opportunities for hands-on learning with the region as a field. Producers, the university, Tsurui Village, and the hotel have joined forces to bring the story of Tsurui's ingredients to guests.

What Is Craft Beef?
Craft Beef is made from crossbred cattle, a cross of Holstein and Japanese Black (Kuroge Wagyu). The cattle are raised with care on spent grain from the beer-making process as feed, with the aim of producing beef with a tender texture and the sweetness of its fat. Craft Beef is beef born from a new cycle that connects spent grain generated locally to local livestock farming.

Saito Farm representative (producer): The Craft Beef initiative is a new challenge for a farm that aims to grow together with the local community in Tsurui Village. Using craft beer by-products as feed lets the farm take part in a cycle that creates new value without wasting resources, which the representative finds highly meaningful. The representative hopes Craft Beef will help convey the producers' feelings and the appeal of Tsurui Village to many people.
Knot Co., Ltd. representative (craft beer producer): The company brews craft beer that reflects the nature and character of Tsurui Village. The by-products of brewing become feed for cattle raised with care at Saito Farm, and the representative is delighted that the result can be enjoyed as a new local brand. The tasting event is a chance to experience not only the flavor of Craft Beef but also the resource recycling behind it and the story of collaboration among producers, the local government, the university, and the hotel.
Kushiro Public University Co-op (cooperation): Being involved from the menu development stage was a valuable opportunity to learn about Tsurui Village's ingredients and the producers' feelings. The co-op finds Craft Beef appealing not only for its flavor but also for the resource-recycling story behind it. The students took part while considering, from their own perspective, how to convey the appeal of Tsurui Village's ingredients and food culture, and they hope the event will help many people learn about the village.
Tsurui Village Mayor Oishi (organizer): Tsurui Village is a village whose core industries are dairy farming and agriculture, and the ingredients raised in its abundant nature are a great asset. Sparked by the birth of the new beef brand "Craft Beef," this project is an effort in which producers, businesses, and educational institutions work together to share new appeal and possibilities of the village widely. The mayor hopes the event will let many people experience Tsurui Village's ingredients and food culture and encourage them to visit the village.
Kushiro Prince Hotel General Manager Yanagisawa (co-organizer): The hotel sees its role as delivering value nurtured in the region to its guests. The event is a valuable opportunity to introduce Craft Beef, the ingredients carefully raised by producers, and the stories behind them, and it is also the result of collaboration among Tsurui Village, producers, Kushiro Public University, and the hotel.
