One Suite THE GRAND on Kouri Island to Host "One Plate of Okinawa" Dinner with Okinawan Cuisine, Crafts and Wine

One Suite THE GRAND, a small luxury hotel on Kouri Island in northern Okinawa Main Island, will hold a special collaboration dinner on Saturday, December 12 and Sunday, December 13, 2026. Titled "One Plate of Okinawa: Expressing Okinawa Today Through Food and Tableware" (一皿の沖縄。), it takes place at the hotel's restaurant, La BOMBANCE Kouri Island (La BOMBANCE古宇利島), and is themed on Okinawan food and craft.

A Dinner Built Around Okinawan Food and Craft

This event is the 33rd installment of the One Suite Gourmet Journey (ワンスイート美食旅), a series that has offered new dining experiences through collaborations with chefs from across Japan.

This time, PAUL, an innovative restaurant in Motobu Town, Okinawa Prefecture, and La BOMBANCE Kouri Island team up again for the first time in about a year and a half. Three craft artists based in Okinawa and Nakijin Winery also take part, creating a special dinner that emphasizes Okinawan products, from the ingredients to the tableware and drinks. Through the sensibilities of the chefs and craft artists, the event expresses where Okinawan gastronomy stands today.

The One Suite Gourmet Journey Series

One Suite THE GRAND treats food as one of the main purposes of a trip, and has continued to hold the One Suite Gourmet Journey, a series of collaboration dinners with chefs from across Japan.

Across more than 30 events so far, chefs from a variety of genres have worked with Okinawan ingredients, combining their skills and sensibilities to create dining experiences available only here.

The 33rd edition builds on this approach by focusing on Okinawan chefs, craft artists and a winery. It looks not only at ingredients nurtured by Okinawa's natural environment but also at local traditional crafts and new craftsmanship, presenting the culture surrounding food as a single dining experience.

Sharing the appeal and potential of Okinawan food culture with people in and outside the prefecture through the hotel is one of the reasons One Suite THE GRAND continues the series.

"One Plate of Okinawa": Expressing Okinawa Today Through Food and Tableware

The theme is "One Plate of Okinawa: Expressing Okinawa Today Through Food and Tableware." Chef 松岡寿行 of PAUL, who has continued to engage with Okinawan food culture, and Chef 尾高翔太 of La BOMBANCE Kouri Island will each bring their skills and sensibilities to a special course centered on Okinawan ingredients.

The tableware that carries the dishes consists of pieces made especially for this event by three craft artists based in Okinawa.

  • 山上學 (Okinawa-yaki, 沖縄焼き): A ceramic artist who expresses the memory of Okinawa's soil and nature through a distinctive technique.
  • 稲嶺盛一郎 (Ryukyu glass, 琉球ガラス): A glass artist who creates original glass works that combine tradition and innovation.
  • 加堂勝久 (lacquerware, 漆工芸): A lacquer artist who draws on Okinawan woodworking and lacquer techniques to make works with a contemporary sensibility.

With the food and tableware bringing out each other's appeal, each plate is completed as a single work. An order-taking event is also planned for some of the tableware made for this event.

Wine from Nakijin Paired with Okinawan Cuisine

For the drink pairing, some of the wines will come from the first vintage of Nakijin Winery (今帰仁ワイナリー), which makes wine in Nakijin Village, Okinawa Prefecture.

The winery faces local agricultural issues head-on and pursues new possibilities for winemaking in Okinawa through efforts such as putting abandoned farmland to use and linking agriculture with welfare. At this event, pairings of ingredients grown in Okinawa with the winery's wine present the appeal of a new local food culture.

About the Venue

One Suite THE GRAND stands on a hill on Kouri Island in northern Okinawa Main Island. It is a small luxury hotel with 26 rooms, offering a stay centered on food in a location overlooking the beautiful sea.

Its in-house restaurant, La BOMBANCE Kouri Island, serves creative Japanese cuisine that layers original sensibilities over Japanese culinary tradition, using mainly ingredients from Okinawa Prefecture. Through the One Suite Gourmet Journey, the hotel has shared new aspects of Okinawan ingredients and food culture by continuing to exchange ideas with chefs in and outside the prefecture, and "One Plate of Okinawa" is part of that effort.

The hotel says it will continue to offer dining experiences worth traveling for, expressing Okinawan gastronomy by connecting the skills and thoughts of chefs, craft artists and producers.
