A specialty kakigori (shaved ice) shop is opening in Machida, Tokyo. Lincoln Hyokaten launches on June 22, 2026, bringing the restaurant group LETS Co., Ltd. back to its very roots.
A Company Born from Shaved Ice
LETS Co., Ltd., which currently operates izakaya restaurants such as "Izakaya Lincoln" and "Sakaba Rokkaku" across Tokyo and Kanagawa, did not begin as a restaurant group.
Three years ago, the company started out by opening a summer-only shaved ice shop called "Nakameguro Iceman" in Nakameguro, Tokyo — a small operation run with a single Japanese cuisine artisan, without significant capital or a permanent location.
The success of that modest beginning provided the foundation to open "Izakaya Lincoln" in Hiratsuka, Kanagawa, followed by "Sakaba Rokkaku" in Nerima, Tokyo, and another "Izakaya Lincoln" in Machida, Tokyo — growing into the business it is today.
Last summer, the company operated a limited-time kakigori shop under the "Lincoln Hyokaten" name, which drew more demand than expected. The response and requests from guests to bring it back led to the decision to launch fully as Lincoln Hyokaten on June 22, 2026.
Shaved Ice with Room to Evolve
As Japanese summers grow hotter each year, the shop's concept centers on the idea that kakigori can still evolve further.
The approach behind each creation draws on Japanese culinary sensibility — maximizing the flavor of fruits, using traditional techniques to create layered taste experiences, and designing each cup to offer contrasts in temperature and texture. The goal is to craft a shaved ice experience that feels as composed as a full-course meal.
Every item on the menu comes with three complimentary additions: condensed milk (to pour over the ice), Japanese pickles (as a palate cleanser), and warm clear soup. These touches, more at home in a Japanese restaurant than a dessert shop, are intended to keep the experience enjoyable from start to finish.

Fresh Strawberry Cream (¥1,800 including tax)
The shop's signature item. Layers of house-made strawberry sauce, condensed milk, and fresh cream create a cup reminiscent of a strawberry shortcake. Strawberry flavor is woven through the bottom, middle, and top layers, so every bite delivers a fresh berry taste. A side chocolate sauce allows guests to shift the flavor profile toward a strawberry-chocolate combination.
Shingen (¥1,800 including tax)

A Japanese-style creation layered with kuromitsu (black sugar syrup), kinako (roasted soybean flour), shiratama (rice dumplings), azuki beans, and nuts — evoking the flavors of traditional wagashi. The deep sweetness of kuromitsu and kinako, the chewy bite of shiratama, and the gentle sweetness of azuki come together in what the shop describes as the cup that best expresses the artisan's Japanese culinary sensibility.
Pistachio and Raspberry (¥1,800 including tax)

A creative combination of rich pistachio and bright, tart raspberry. The nuttiness and berry fragrance build on each other as the cup is eaten, with the flavor shifting with every mouthful. The shop presents this item as a balance of visual appeal and taste.
Tropical (¥1,800 including tax)

A tropical cup made with mango, pineapple, passion fruit, and pink grapefruit. Rich sweetness and refreshing acidity combine in a flavor suited to hot summer days, with a satisfying sensation of eating whole fruit.
