Park Hyatt Kyoto (location: 360 Masuyacho Kodaiji, Higashiyama-ku, Kyoto; General Manager: Matthew Carroll) presents the 6th edition of its Home-Style Cooking Class led by Executive Chef Tsuyoshi Iryo on February 4 (Wednesday) and February 18 (Wednesday), 2026. With the theme of "Ichiju-Sansai" (one soup, three dishes), the class offers an experience filled with enjoyable learning and discovery.

About the Home-Style Cooking Class Series

The Home-Style Cooking Class series introduces cooking methods and techniques that maximize the appeal of familiar, everyday ingredients through a demonstration format. Participants can learn the knowledge to easily recreate hotel-quality flavors at home through the surprising techniques and tips revealed from a professional perspective.

Special Collaboration: Japanese and Western Culinary Excellence

This class features Mitsuo Nakajima, Head Chef of Kyodaiwa, a long-established traditional Japanese restaurant founded in the 10th year of Meiji (1877) that coexists with Park Hyatt Kyoto. Together with Executive Chef Tsuyoshi Iryo of Park Hyatt Kyoto, they will present a total of 5 Japanese and Western dishes, where Japanese aesthetics that delicately elevate the blessings of each season resonate with Western refinement.

The heartfelt hospitality that Sanso Kyodaiwa provides daily in their cuisine combines with the hotel's unique elegance in this special collaboration.

Theme: Ichiju-Sansai

The theme is "Ichiju-Sansai," which symbolizes Japanese food culture. This traditional Japanese meal format, combining rice and soup with a main dish and side dishes, is deeply nourishing and nutritionally balanced. Both chefs will carefully share professional techniques and tips from their respective perspectives.

About the Chefs

Chef Mitsuo Nakajima - Kyodaiwa Head Chef

Chef Mitsuo Nakajima

Chef Nakajima began his path in Japanese cuisine in 1998, training in Tokyo and Kyoto before joining Kyodaiwa in 2003. He served as both Deputy Head Chef of Kyodaiwa and Head Chef of the food division from 2010, becoming Head Chef in July 2023. Together with his staff, he works daily to preserve the traditions of Japanese cuisine while taking on new challenges.

Executive Chef Tsuyoshi Iryo

Chef Iryo began his culinary career in 2000, serving in key positions at luxury hotels including Park Hyatt Sydney and Andaz Tokyo. He was appointed Executive Chef of Park Hyatt Kyoto in February 2019. As Executive Chef, he values teamwork above all else, bringing the team together to highlight the individuality of the four restaurants and bars, providing unique dining experiences befitting a luxury guesthouse.

Kyodaiwa and Park Hyatt Kyoto, nestled in Kyoto's Higashiyama district, have shared time together since the hotel's opening.

About Kyodaiwa

Kyodaiwa is a traditional Japanese restaurant founded in the 10th year of Meiji (1877), located on the mid-slope of Kyoto's Higashiyama. Surrounded by famous Rakuto tourist spots such as Kodaiji Temple and Kiyomizu-dera Temple, it offers an extremely rare location within a landscape preservation district where height restrictions apply, yet provides panoramic views of the Yasaka Five-Story Pagoda and the ancient city's townscape.

This area's history is ancient, originating with Ryōzen-ji Temple built in the 1st year of Enryaku (782), and it is said that Toyotomi Hideyoshi also visited. After becoming a villa of Nishi Hongan-ji Temple in the late Edo period, it served as the venue for the "Suikōkan Conference" at the end of the Edo period, where patriots such as Sanetomi Sanjo and Kogoro Katsura gathered to plan expulsion of foreigners.

In Shōwa 24 (1949), part of the structure was expanded to open as a restaurant, and in Reiwa 1 (autumn 2019), they welcomed the luxury guesthouse "Park Hyatt Kyoto" onto their grounds. While preserving what only Kyodaiwa possesses since its founding, they continue to pursue new forms of Kyoto hospitality.
