The Secret Behind the Flavor: Handcrafted Golden Chicken Oil
A defining element of Saburoubei's dishes is its house-made chicken oil. Crafted at the Takamatsu flagship store, chicken skins are slow-cooked over a low flame for two and a half hours, producing a deep golden oil that stands apart from ordinary versions. This golden chicken oil is used in both summer noodle dishes, lending them their distinctive richness.
Chilled Ramen with Kimchi — Kelp Water-Steeped Chicken Broth: ¥950 (tax included)
A returning crowd-pleaser, this dish features a cold chicken broth made richer with overnight-steeped kelp water as a secret ingredient. The result is a broth that is full-bodied yet surprisingly clean on the palate, pairing well with the house-made chicken chashu.
Rich Sesame Miso Chilled Ramen: ¥950 (tax included)
A newcomer to the summer lineup, this dish brings a spicy, umami-forward flavor to the chilled noodle selection. Also served with house-made chicken chashu.
