Saburoubei (さぶろうべい), a chicken and Chinese cabbage hot pot chain that has been a soul food staple in Ishikawa Prefecture for over 75 years, is running a limited-time "Year Three Gratitude Festival" (三年目の感謝祭) at its Toyama Kosugi location from May 8 (Friday) to May 31 (Sunday), 2026.

Saburoubei has long been a beloved soul food of Ishikawa Prefecture, and the Toyama Kosugi location opened with the goal of sharing those flavors with the people of Toyama. Now entering its third year, the restaurant is marking the milestone with a series of exclusive specials — both to thank regular customers and to welcome those who have been curious but haven't yet visited.

Available only at the Toyama Kosugi location, this special hot pot layers eight types of umami-rich ingredients in a carefully balanced ratio. Toppings include oyako chicken, young chicken, chicken giblets (torimotsu), highland pork, mushrooms, fresh new onions, and kimchi — a combination that would ordinarily cost well over ¥2,000, offered here at just ¥1,200.

The Signature Dish: Tori Hakusai Nabe, 75 Years in the Making
Saburoubei was founded in 1950 during the cold postwar years in Hokuriku. Using the limited ingredients available at the time, founder Saburohei developed the Tori Hakusai Nabe (Chicken and Chinese Cabbage Hot Pot) through years of trial and error. Fresh chicken and Chinese cabbage are cooked together in a special pot using a waterless method that concentrates the natural umami of the ingredients. The dish is finished with a dipping sauce mixed with egg, and the flavorful broth at the end of the meal has earned its own following. The balance of chicken oil and a secret soy-based sauce — unchanged for over 75 years — has made it a dish that continues to warm diners across generations.
