Sophie at EDITION, on the 14th floor of The Tokyo EDITION, Ginza, is set to relaunch under a new Italian concept starting Wednesday, June 3, 2026. The restaurant will serve classic Italian cuisine in a refined urban trattoria style, with views overlooking the streets of Ginza.
New Concept Overview
Authentic Italian Cuisine in the Heart of Ginza
The menu features signature handmade pasta crafted daily, alongside dishes made with carefully selected ingredients from both Japan and Italy. Executive Chef Marco Violano, originally from Puglia, and Executive Sous Chef Toru Hirakawa from Hokkaido bring together the essence of Italian cooking and Japan's rich food culture.
A Commitment to Tradition and Fine Ingredients
The kitchen draws on traditional Italian techniques to bring out the best in quality ingredients from both countries. Handmade pastas range from timeless classics to seasonal offerings. The menu spans antipasti through dolci, staying true to the fundamentals of Italian cuisine.
An Italian Wine Journey
The wine list centers on wines that reflect the terroir, culture, and traditions of regions across Italy — from north to south — including classic labels alongside bottles from boutique wineries. Japanese wines and Burgundy classics also feature on the list.
Cocktails Inspired by Italian Classics and the Seasons
The cocktail menu includes Italian classics such as Negroni and Bellini, as well as seasonal creations using domestic fruits and herbs. Non-alcoholic mocktails are also available for pairing with meals or for relaxed time at the bar counter and rooftop.
Course Menus Celebrating Italian Food Culture
Lunch offers 3-course and 4-course options, while dinner features 4-course and 5-course menus, with a chef's omakase course available by advance reservation. The courses bring together Italian cuisine and premium Japanese ingredients with seasonal inspiration.
Stuzzichini at The ROOF Rooftop Bar
On the rooftop of The Tokyo EDITION, Ginza, the rooftop bar The ROOF will serve Italian finger food known as "stuzzichini," including bruschetta and arancini — small plates to enjoy alongside drinks, with nighttime views of Ginza.

About Executive Chef Marco Violano

Marco Violano, originally from Puglia, Italy, brings over 25 years of culinary experience. He has held senior positions at luxury hotels and Michelin-starred restaurants across London, Milan, Singapore, Beijing, and Jakarta, and also ran his own restaurant in Singapore. He contributed to a Michelin star at a hotel restaurant in Beijing and received the gold award at the Malaysia International Gourmet Festival. In 2025, he was appointed Executive Chef at The Tokyo EDITION, Ginza and Toranomon.
