Timed to coincide with Japan's Golden Week holidays and the early summer outing season, the fair centers on the concept of a "gourmet travel experience" — bringing the tastes of Japanese regions directly to the dining table.
Featured ingredients include burihira — a hybrid fish combining the rich, fatty flavor of yellowtail (buri) with the firm texture of hiramasa (amberjack) — sourced from Ehime and Kagoshima. Seasonal bonito (katsuo) from Kagoshima offers a savory, satisfying red-flesh bite. From Shizuoka, marinated fresh whitebait (shirasu) is paired with quail egg in a moonlit gunkan roll, evoking the coastal scenery of Suruga Bay.
