Pastry Head Chef Yuji Takahashi, The Strings Omotesando

Takahashi has loved making things since childhood, which led him to dive into the boundless world of confectionery. After graduating from a culinary school, he spent five years learning the fundamentals of bread and pastry at the bakery of The Capitol Hotel Tokyu, then went on to work as a junior sous chef at The Ritz-Carlton, Tokyo. He was appointed Pastry Head Chef at The Strings Omotesando in May 2017. Beyond drawing out the flavors of seasonal ingredients, he places great importance on form and silhouette, carefully selecting tableware to create entertaining, playful sweets that anyone can enjoy.
