Two new sweets made with soy protein are going on sale at Patisserie Yu Sasage in Tokyo's Setagaya. The Soy Brownie and the Soy Boule de Neige Chocolat are available for a limited time starting Friday, October 9, 2026.
The sweets are the first product of "ULTORA CRAFT / LAB," a collaboration project launched by ULTORA, a body-making brand that supports everyday health maintenance. The project pairs ULTORA's product philosophy with the techniques of well-loved local shops, and aims to research and pursue food experiences without compromise.
Development Story
For this collaboration, the soy protein cocoa flavor from ULTORA was combined with Yu Sasage's brownie and boule de neige.
The sweets are made so that the powdery or dry texture typical of protein is not noticeable, while the original taste of Yu Sasage's Western confections is fully kept. They offer a way to add protein while the flavor stays the same, as guilt-free Western sweets that suit modern health needs.
Chef Sasage of Yu Sasage commented on the development:
When people think of sweets made with protein, they often imagine that taste is sacrificed to put health first. In this development, we first made sure the sweets were truly delicious as sweets. ULTORA's soy protein has a good flavor and went well with sweets, so we refined the products through repeated trial batches until we were satisfied. I hope they will be enjoyed even by people who don't usually drink protein.

Chef Sasage, who trained at well-known patisseries in Tokyo, opened Patisserie Yu Sasage in Chitose-Karasuyama, Setagaya, Tokyo, in May 2013.
Based on traditional French confections, the shop offers fresh pastries made with seasonal ingredients and baked sweets prepared with care from the choice of ingredients to the method.
