This refined offering celebrates the vibrant essence of strawberries and the gentle arrival of spring, carefully crafting each dish to harmonize aromas and textures for an exquisite and luxurious experience.

Tradition Meets Seasonality: The Craftsmanship of Bocuse d'Or Japan Finalist Chef Tsuchiya

Executive Sous Chef Masataka Tsuchiya embodies the brand's spirit of "timeless elegance" through his creations. As a finalist in the Bocuse d'Or Japan competition, considered a gateway to the world's most prestigious culinary contest, Chef Tsuchiya brings exceptional technique and rich sensibility to elevate the natural appeal of each ingredient, delivering subtle surprises and lasting impressions through his sweets and savory items.

The savory selection includes a "Lobster Roll" that pays homage to the Waldorf Salad, a tribute to the brand's origins. The rare and elegant "Gekkou Yurine" (moonlight lily bulb) is luxuriously featured in a smooth "Gekkou Yurine and Snow Crab Mousse," finished with bottarga to add depth and brilliance to the flavor. The "Rape Blossom Chiffon Cake with Wild Vegetable Whip and Prosciutto" incorporates rape blossoms into the batter, gently layered with the subtle bitterness of wild vegetable whip and the concentrated umami of prosciutto powder, elegantly capturing spring's freshness. Executive Sous Chef Masataka Tsuchiya

After graduating from Kyoto Culinary School, Chef Tsuchiya spent 13 years refining his skills at Kyoto Hotel Okura.

He has earned numerous accolades, including representing Japan at the "S.Pellegrino Young Chef Academy 2020" and finishing as runner-up in the "Bocuse d'Or 2022" Japan selection.

He was also selected as the Osaka representative for the January 2026 Bocuse d'Or Japan finals. Chef Tsuchiya has established his unique style that fuses traditional French techniques with contemporary creativity, maximizing the potential of ingredients.
