Yamanaka Onsen Kajikaso, which opened in August 2025 in Kaga City, Ishikawa Prefecture, introduces a new dining concept with the upcoming Restaurant Fuka. Starting February 19, 2026, guests can book accommodation packages that include course meals at this exclusive restaurant, set to open on April 1, 2026.

A Fresh Approach to Hokuriku Cuisine
Restaurant Fuka operates under the concept of "Hokuriku's bounty, reimagined," presenting the region's rich ingredients through contemporary sensibilities and creative expression. Located on the 5th floor, the restaurant offers a serene atmosphere where the sound of flowing river water accompanies the dining experience.
Each dish reflects the changing seasons, combining traditional Japanese culinary techniques with modern innovation. The restaurant features live cooking stations where chefs prepare dishes over charcoal and open flames, creating an immersive dining experience.

Since opening in August 2025, Yamanaka Onsen Kajikaso has positioned itself as a "culinary destination of Hokuriku," featuring a buffet-style restaurant with live cooking stations offering approximately 80 dishes that showcase seasonal Hokuriku ingredients and regional specialties.
