Against this market background, the company has developed a new "aging kappo" format, expanding its aging technology from meat to fish and vegetables.
At the heart of Ginza Yazaemon is expressing the essence of aging through the context of kappo cuisine. Applying the knowledge cultivated through Kuroge Wagyu aging, the restaurant ages carefully selected meat, fish, and vegetables according to their characteristics. The umami is brought out to its fullest, and each dish is carefully prepared by artisans at the counter kitchen.
