Aging Beef, a subsidiary of Belluna Co., Ltd. and a pioneer in aged Kuroge Wagyu beef restaurants in Japan, will open a new kappo restaurant called "Ginza Yazaemon" in Ginza on January 15, 2026 (Thursday).

In high-end areas like Ginza, the era has shifted toward choosing "experience value backed by reliable technology." Against this market background, the company has developed a new "aging kappo" format, expanding its aging technology from meat to fish and vegetables.

At the heart of Ginza Yazaemon is expressing the essence of aging through the context of kappo cuisine. Applying the knowledge cultivated through Kuroge Wagyu aging, the restaurant ages carefully selected meat, fish, and vegetables according to their characteristics. The umami is brought out to its fullest, and each dish is carefully prepared by artisans at the counter kitchen.
