Starting June 15, 2026, The Living Pavilion by Aman at Aman Kyoto is bringing back its beloved summer-only "Muskmelon Shaved Ice," available through September 30. The dessert uses a whole domestic muskmelon per serving, offering a deeply aromatic and refreshing experience in the resort's lush forest garden.
The shaved ice base is made by freezing a homemade blend of muskmelon juice and milk, then shaving it into a light, crisp texture. Each spoonful carries a fresh, full-bodied sweetness that fills the palate.
The dessert is finished with two-colored melon balls — muskmelon and red-flesh melon — elegantly arranged on top, along with wasanbon crème chantilly for a refined touch. Nestled inside the shaved ice are smooth vanilla ice cream made with Madagascar vanilla and red-flesh melon balls. A separately served red-flesh melon condensed milk sauce can be poured over the top to add richness and depth, creating an evolving combination of flavors and textures as you work through the bowl.
Midway through, an optional glass of champagne can be poured directly over the shaved ice. The elegant bubbles and the champagne's subtle acidity complement the melon's sweetness, turning the dessert into a sophisticated "adult float."
The shaved ice is served from 3:00 PM (1.5-hour seating limit) in the tranquil garden of the resort, where the gentle sound of a forest stream provides a naturally cool backdrop to the experience.
