BROWN CHEESE BROTHERS, a sweets brand built around brown cheese made from whey (a byproduct of cheesemaking), is set to relaunch on Saturday, April 25, 2026. The refreshed lineup features four varieties, including a caramel cake and baumkuchen, each offering a flavor that starts with the aroma of caramel and finishes with the richness of cheese.
What Is Brown Cheese — "The Miracle Cheese"
When producing cheese from raw milk, approximately 90% of the milk becomes a byproduct called whey. Brown cheese is created by slowly simmering this whey over time, transforming it into a product with a deep, sweet richness. The result — whey reborn through careful craftsmanship — is aptly called "the miracle cheese."
Note: This product does not meet the definition of "cheese" under Japan's Ministerial Ordinance on Component Standards for Milk and Dairy Products, but the name "brown cheese" is used here in accordance with its widely recognized common usage.

Meet the New Characters: Bruno and Nosto

Bruno (left, younger brother) and Nosto (right, older brother).
Hardworking Bruno busily simmers the whey, while his kind older brother Nosto watches over and cheers him on. Together, these brotherly characters represent the heart of BROWN CHEESE BROTHERS.
Origins: Norway's Beloved Brunost
Brown cheese traces its roots to Norway, where it is known as Brunost — a name derived from the Norwegian words "Brun" (brown) and "ost" (cheese). The name reflects its distinctive appearance and flavor, and the product is enjoyed widely throughout the country.
Whey Sourced from Nomori Co., Ltd.
Some of the whey used in BROWN CHEESE BROTHERS comes from Nomori Co., Ltd., a sustainable dairy operation in Nasu-machi, Tochigi. The company runs "Shinrin no Bokujyo" (Forest Farm) and "Cheese Kobo Nasu no Mori" (Nasu Forest Cheese Workshop), with a philosophy centered on the coexistence of people, nature, and animals.

At Forest Farm, around 25 Jersey cattle graze freely within the forest, producing high-quality milk that reflects the changing seasons. Retired cattle are repurposed into processed meat and leather goods, embodying a fully sustainable approach to dairy farming.
The whey generated during cheesemaking at Nasu Forest Cheese Workshop is passed on to GOOD NEWS and transformed into BROWN CHEESE BROTHERS sweets — a partnership that creates value through the circle of dairy farming.
Yamakawa Masahiro, representative of Nomori Co., Ltd., shared: "There are nearly 400 small cheese workshops across Japan, and their high-quality cheeses are gaining international attention. At the same time, a great deal of whey remains unused and has become a challenge for many of these workshops. We hope that through brown cheese sweets, more people will come to appreciate the appeal of brown cheese."

To celebrate the brand renewal, customers who purchase two or more qualifying products at the store during the campaign period will receive one BROWN CHEESE BROTHERS Financier free of charge.
