The collaboration began when hotel staff, walking around the neighborhood to discover the appeal of Kabutocho, met the nearby brewery BALDYS GOOD BEER. The hotel hopes to give shape to the area's appeal together with the people active in Kabutocho, and to let guests feel a connection with the local community.
GRATEFUL RED, the First Anniversary Craft Beer

GRATEFUL RED is a shiso IPA made with red shiso. A refined shiso aroma is joined by light, citrus-like aromas from the hops, resulting in a refreshing taste centered on red shiso. It can be enjoyed with a variety of dishes, including juicy hamburgers and Japanese cuisine.
The beer's ruby red color is inspired by red, which symbolizes rising stock prices in Kabutocho, a financial district, and is also the hotel's signature color. Red shiso from Beppu is the main ingredient, with a small amount of dragon fruit used to adjust the color. The name combines "grateful," for thanks on reaching the first anniversary, and "red," Kabutocho's lucky color.

How the Beer Came to Be (From BALDYS GOOD BEER)
The collaboration began when staff from Caption by Hyatt Kabutocho Tokyo visited the brewery while beer was being brewed. Talk of exploring Kabutocho on foot to find its appeal led to an exchange sparked by an interest in beer making, and the idea of "making beer together someday" gradually took shape as the creation of a beer to celebrate the hotel's first anniversary.
The themes were "a beer with the character of Kabutocho" and "a beer that goes well with hamburgers." Taking inspiration from the way panels turn red when stock prices rise, the team brought in red, Kabutocho's lucky color, and aimed for an IPA that is crisp yet full of flavor. While searching for ingredients, they met a red shiso farmer in Beppu, Oita Prefecture, who offered cooperation, and the ruby red beer made with red shiso was completed.
First Anniversary Burger

To celebrate the first anniversary together with the neighborhood's lucky color, the hotel has created a special burger. Red, the color closely associated with Kabutocho as a sign of rising stock prices, appears in a bun colored with beet powder. The unusually reddish bun holds a 200 g beef patty, the largest patty used in any burger served at the hotel. Red onion, tomato, and thick-cut bacon are layered with smoky tomato relish, adding a smoky aroma and a moderate sweetness.
