China Shadow, the Chinese restaurant on the 26th floor of Strings Hotel Tokyo InterContinental, is rolling out the summer edition of its "Gastronomic Theater" series on June 4, 2026. Head chef Hidekazu Ando has designed the menu around ingredients from Japan's Tohoku region — including heirloom vegetables shaped by the area's history and landscape, as well as locally sourced produce from its rich natural environment.
Highlights include Mogami beef from Yamaguchi Livestock in Yamagata and Sendai miso from Miyagi, woven into creative Chinese courses that reflect Ando's distinctive culinary style.
