Tour d'Argent Tokyo, located at Hotel New Otani (Tokyo) in Kioicho, Chiyoda, is set to serve a new summer menu titled "Ma Provence" from Wednesday, July 1 through Sunday, August 23, 2026. The menu is created by Executive Chef Renaud Augier, a recipient of the M.O.F. (Meilleur Ouvrier de France — France's highest artisan honor), and draws inspiration from the brilliant shores of the French Côte d'Azur.
A Culinary Journey to the South of France

Chef Renaud Augier carries on over 400 years of culinary tradition from Tour d'Argent, the oldest restaurant in France. For "Ma Provence," he has channeled the elegance of Nice's coastline, the refinement of Monaco, and the golden light of Saint-Tropez into a seasonal menu. Recognized by France as one of its finest culinary artisans, Augier brings the warmth and flavors of the French Riviera to Tokyo for the summer season.
Signature Dishes

Grilled Sea Bass with Black Olive Sauce
(LOUP grillé aux olives noires Taggiasche et pétales de courgettes garnies de fine ratatouille)
Fresh, in-season sea bass is grilled to a golden crisp and paired with a sauce made from Italian Taggiasca black olives — a small-batch variety prized by food lovers worldwide for its rich fragrance and soft, fruit-like sweetness. The sauce complements the delicate umami of the sea bass with subtle elegance.

Sète-Style Mont-Saint-Michel Mussels and Veal Braise with Marjoram Fragrance
(POITRINE DE VEAU ET MOULES DU MONT-SAINT-MICHEL braisé façon Sétoise dans une fine coque de farce et jus de marjolaine)
A modern take on a traditional seafood stew from the southern French port town of Sète. The concentrated flavors of seafood are lifted by a sauce fragrant with bittersweet marjoram and citrus. This dish is a tribute to local tradition, with an interplay of sophisticated aromas.

Roasted Duckling with Cajun-Spiced Smoked Summer Vegetables
(CANETON aux légumes fumés au cajun, petit farci d'artichaut à la sariette et barbajuan)
Tour d'Argent's signature roasted duckling is reimagined for summer, served with cajun-spiced smoked seasonal vegetables and épices as accents in the sauce. The dish carries a distinct seasonal quality while staying true to the restaurant's culinary heritage.
Tour d'Argent: A Restaurant with Four Centuries of History

Tour d'Argent was founded in 1582 on the banks of the Seine, near the Île Saint-Louis in Paris. Named after the glistening mica-adorned Tournelle Castle visible from its windows — "Tour d'Argent" meaning "Silver Tower" in French — it attracted royalty including King Henri III and became one of the most storied addresses in French culinary history. Its sole international outpost, Tour d'Argent Tokyo, has continued this tradition for over 40 years at Hotel New Otani (Tokyo).
