Doremo LeTAO, a bakery and café in Chitose, Hokkaido, began selling a new product called COOORN (コーーーン) on June 1, 2026. Developed over the course of a year, the pastry is filled with sweet Hokkaido-grown corn and features a chewy, gluten-free special dough that sets it apart from anything else in the LeTAO lineup.

Three Textures in Every Bite

COOORN is built around three distinct textures that come together in each bite:

  • Crispy (カリッ) – Gouda cheese baked golden on the outside
  • Chewy (もちっ) – LeTAO's original dough, made without yeast and using a gluten-free approach for a uniquely stretchy texture
  • Popping (つぶつぶ) – Corn kernels inside that burst with natural sweetness as you chew

The filling combines Hokkaido corn sautéed in butter with Parmesan and Mozzarella cheeses. The pastry contains no black pepper or strong spices, making it easy to enjoy at any age. When reheating at home, a microwave or toaster will bring the cheese back to a melty, freshly-baked state.

One Year in the Making

Development story behind COOORN

The COOORN project took a full year from concept to completion. The development team set out to create something that was neither standard bread nor a conventional pastry dough – aiming for a texture with exceptional chewiness. By choosing a yeast-free, gluten-free approach, they arrived at a quality that had not been achieved in the LeTAO lineup before.

The name "COOORN" uses three O's to represent the abundance of corn packed inside, and the shape of the finished product mirrors the round "O" form. The three O's also reference the three zeros in "000," which evokes the kanji for "thousand (千)" in Chitose's name – a tribute to the city where this pastry is sold exclusively.

Celebrating Chitose Airport's 100th Anniversary

COOORN's launch coincides with Chitose Airport's 100th anniversary in 2026. The airport traces its origins to 1926, when a landing strip was built through local community volunteer efforts and the first aircraft arrived. It has since developed into the current New Chitose Airport and the Japan Air Self-Defense Force Chitose Air Base.

The product is limited to the Chitose area and available only while supplies last.
