Kajuan (祝いの銘菓 果寿庵), a sweets brand established in Fukushima, began selling its Echigo Hime Macaron at its CoCoLo Niigata store on March 25, 2026. The product features the Echigo Hime strawberry — a variety unique to Niigata Prefecture — and is aimed at tourists and business travelers looking to bring home a distinctly local souvenir.

Background on the Product Development

The name "Kajuan" reflects a wish for seasonal fruits (果) to be shared at celebrations (寿). The brand has built its reputation through handcrafted fruit mochi (daifuku), carefully wrapping premium fresh fruits sourced from farms across Japan.

With the opening of its CoCoLo Niigata location, Kajuan faced a particular challenge: how to share the exceptional flavor of the Echigo Hime strawberry with visitors from beyond the prefecture. The Echigo Hime has very delicate flesh and is notoriously difficult to transport outside of Niigata.

To bring the rich aroma and sweetness of this rare berry to a wider audience, Kajuan developed a new approach — blending traditional fruit mochi techniques with the modern format of French macarons.
