Brunch café FLIPPER'S, operated by Baycrews Co., Ltd., is marking the 10th anniversary of its brand on July 9, 2026. Since its debut in Shimokitazawa in 2016, FLIPPER'S has grown from a single café known for its "miracle soufflé pancake" into a brand with locations across Japan and overseas. To celebrate the milestone, the brand is launching a series of anniversary projects, starting with two limited-edition pancakes: a strawberry pancake chosen by customer vote, and a peach pancake selected through an in-house staff competition.
First Release: Strawberry Brûlée Pancake, Chosen by Customer Vote
To look back on its first decade, FLIPPER'S held a "Flavor General Election" on its official social media, inviting customers to vote for their favorite among the brand's past limited-edition soufflé pancakes. Strawberry received the most votes, and the result inspired a new anniversary-only creation: the Strawberry Brûlée Pancake.
The pancake carries on the appeal of the popular 2021 Strawberry Mille-feuille Pancake, this time centered on a soufflé pancake with a fragrant brûlée finish, generously topped with tart strawberries and juicy Amaou strawberry gelato. The crisp brûlée, fluffy soufflé pancake, fresh strawberries, and berry sauce come together for a dish befitting the 10th anniversary.
The Strawberry Brûlée Pancake will be available from July 9 (Thursday) exclusively at the Jiyugaoka, Kichijoji, and Shimokitazawa stores.
Alongside the pancake, FLIPPER'S is also releasing a pairing drink, Strawberry and Elderflower Sparkling Juice. The fruity freshness of strawberries meets the delicate, muscat-like aroma of elderflower for a refreshing summer drink.
Second Release: Twinkle Peach Pancake, Born From an In-House Staff Competition
FLIPPER'S also held its "Best Menu Award," an in-house competition inviting staff from every store to submit original menu ideas under the theme of "a signature summer dish for the brand." Among the many entries, the Twinkle Peach Pancake, created by staff at the Shibuya store, was nominated as the representative entry.
As a special addition to the 10th anniversary lineup, the Twinkle Peach Pancake will be available from July 15 (Wednesday) exclusively at the Shibuya and Umeda stores. Konpeito candy scattered across the plate represents a "sparkling summer night sky," while fluffy cotton candy melts under peach sauce to reveal a refreshing yogurt cream underneath. Chewy mochi-wrapped soda ice cream and juicy peach compote add layers of contrasting textures and flavors throughout.
Two limited-time drinks are also available alongside the pancake: Peach Cream Soda and Peach-Packed Peach Tea, both featuring the juicy sweetness and refreshing taste of peach.
More Anniversary Projects to Come
FLIPPER'S plans to continue its 10th anniversary celebrations beyond this summer, with collaboration projects and menus devised by staff from its overseas locations to follow. Further details will be announced on a dedicated 10th anniversary page set to launch on July 9 (Thursday).
