Katoh Pleasure Group (Tokyo headquarters: Minato-ku, Tokyo / President & Group CEO: Hiroaki Kato) will offer Japanese cuisine at the in-house restaurant of "Fufu Karuizawa Yoko no Kaze" starting with overnight stays from Sunday, February 1, 2026. Enjoy new Japanese cuisine that incorporates unique sensibilities while utilizing the techniques of the previous "Japanese French" style.
Karuizawa, located at the foot of Mount Asama, is blessed with pure water, clear air, and nature that shows rich expressions throughout the four seasons. At "Fufu Karuizawa Yoko no Kaze," we propose Japanese cuisine that combines traditional Japanese culinary techniques with Karuizawa's French food culture and original sensibilities, while carefully considering the local climate and ingredients.
The cuisine centers on mountain delicacies and seasonal ingredients cultivated in and around Shinshu and Karuizawa. While cherishing the original flavors of the ingredients, each dish is carefully prepared with attention to aroma, temperature, and aftertaste. While respecting the flow of traditional Japanese cuisine, please enjoy refined dishes that quietly reflect culture, memories of the land, and the changing of the seasons.
Cuisine Highlights

Shinshu Wagyu Grilled Over Firewood
Wagyu beef grilled at the restaurant's firewood station offers a deep flavor with tightly locked-in umami and a subtle hint of firewood aroma. This main dish showcases the appeal of the ingredients themselves, served alongside shiitake mushrooms cultivated from natural logs in Karuizawa's pristine environment.

Silver Cod Saikyo-yaki: Silver cod with moist interior and aromatic skin, paired with a refreshing yuzu-scented cream sauce
Snow Crab Kamameshi: A blissful dish of seasonal snow crab cooked fluffy with Koshihikari rice, spreading rich flavors
