GENDY's Ginza shop has begun taking reservations for The Premium Bitter Caramel Rum Ball, which goes on sale on November 1, 2026. Reservations opened in October and can be made in store or by phone.

A Grown-Up Rum Ball With Two Spirits

The rum ball starts with a dough built on French fermented butter, carrying the richness of almond praliné and hazelnut masse. Dark chocolate with 74% cacao, made within 60 days of the cacao harvest, is blended in. Two kinds of chocolate are layered on top as a finishing touch, and the sweet is coated in cocoa powder, making it a treat for grown-ups.

The aroma comes from Dillon Très Vieux Rhum V.S.O.P and Berta's Solo per Giàn (grappa), followed by the sweet lingering taste of rum raisins. The flavor is rich, yet the aftertaste fades remarkably quietly and gently. Quantities are limited.

Of the liquor used, 72% is Dillon Très Vieux Rhum V.S.O.P and 23% is Berta's Solo per Giàn (grappa).

Homemade bitter caramel, carefully roasted (cooked down), is mixed into a batter based on domestic unsalted butter. The cake is coated with vergeoise brune, Tahitian vanilla, and cinnamon for a rich aroma, and finished with Rémy Martin cognac and Ducastaing Armagnac Napoléon for a more fragrant cake.

The Premium Caramel Brandy Cake (GENDY Ginza Exclusive) – ¥10,800 (tax included)

The cake is pitched at gentlemen and pairs bitter-finished caramel with brandy. The brandy is a blend of Rémy Martin cognac and Ducastaing armagnac in a proprietary ratio, and the two spirits' different characters add breadth and depth to the taste and aroma. The finely textured batter is slowly baked at low temperature and soaked generously with the blended brandy. The result has a moderate sweetness, bitterness, and the brandy's gorgeous aroma. It can be cut to your preferred thickness.
