GOOD NATURE STATION, the mixed-use commercial facility in Kyoto, is turning its first-floor kitchen area into a craft burger specialty shop on Tuesday, September 1, 2026. The space, formerly known as "GOOD NATURE KITCHEN," reopens under the new name "GOOD NATURE BURGER."
Drawing on traditional Japanese fermentation techniques, the shop's signature burgers use grass-fed beef patties aged in hishio (a fermented seasoning paste) and shio-koji (salted rice malt), alongside local craft burgers built on carefully selected regional ingredients, including several from Kyoto. The renewal also introduces three new vegan and gluten-free burgers made with buns of 100% domestic rice flour and the fermented soy food tempeh, responding to requests from both domestic and international guests.
